CHARACTERISTICS

THE LAND

The plot is set 300 m up, on the highest part of the En Caradeux slope, under the wood. Facing east, above the 1er Cru vines, its yellowish marly soils and the cooling effect of the trees just above are perfect for the Chardonnay grape.

WINE GROWING

Tilling at the end of winter, followed by natural grass cover to protect the soil from erosion and provide organic matter.
Manual weeding under the rows to control competing vegetation.
Pruned using the Guyot system

WINE MAKING AND AGEING

After harvesting by hand, the complete bunches are pressed slowly in a pneumatic wine press. After pressing, the juice is clarified for 24–48 hours. Alcoholic fermentation and ageing take place in oak barrels one or two years old.
Full malolactic fermentation and gentle bâtonnage.
Aged for 14–16 months.

GENERAL CHARACTERISTICS

White gold to pale yellow when young, it develops golden tints with age. The aromas of white flowers (hawthorn, acacia) open to notes of amber, honey and spices over time. This is a mineral, very harmonious wine on the palate.

HARMONIOUS FOOD/WINE COMBINATIONS

Lively, light and cheerful, this wine is ideal with fish and seafood. It perfectly complements the dual texture - crunchy and soft - of sushi, and its liveliness marries well with freshwater fish in a white sauce, or seafood with pasta or risotto. Lastly, it is also a great accompaniment for the gruyere, blue and goat's cheese families of cheese.
Serve at: 10 to 12 °C.
1 to 5 years, depending on storage conditions (humidity, temperature).

PLOTS

Facing the rising sun, the steeply sloping Pernand-Vergelesses Blanc plot is set 300 m up at the top of the hillside across from the Corton hill, on clay-limestone soils with yellow marls.
